Delicious and healthy energy rounds

I find that having healthy snacks in the house help with the lurking sugar cravings and junk food temptations! These energy rounds are healthy, sweet, and just the right pick-me-up for those sluggish times during the day.

Why are these ingredients special, healthy, and energy boosters?

Cacao Nibs:

What are they? I like Livesuperfoods helpful description, ”Cacao beans are protected by a paper-thin shell, which you remove before eating. When the shell is removed, the bean often breaks into small pieces, called nibs. Nibs are our most popular cacao product because they share all the nutritional benefits of the whole bean with the added convenience of having the shell removed for you.”

Cacao nibs are an amazing source for magnesium. Magnesium is a mineral that helps with circulation, bone strength, muscle function, and nerve function. Since your body cannot produce magnesium you need to eat it through dietary supplements or food…or better yet, chocolate!

Cacao nibs carry more antioxidants than blueberries, green & black teas (actually 4x the amount in green tea), and red wines. Wow! These amazing antioxidants help resist and repair free radicals, reduce cancer risks, contribute to good cardiovascular health, and so much more!

Nibs have theobromine, a stimulate in the central nervous system that boosts energy -similarly to caffeine.

Coconut:

I won’t go into detail, but here is a list of benefits from eating pure, unsweetened, coconut flesh, water, and oil!

It is a great source for fiber, minerals, amino acids, antioxidants, healthy fats, calcium, magnesium, potassium, protein, and antibacterial properties.

It boosts Metabolism, fights many illnesses, hydrates the body, helps your body absorb calcium & magnesium, fights cancer, treats skin disorders, and so much more! I’m only scratching the surface.

Go get some coconuts!

EnergyRounds adapted from {never}homemaker’s Cacao nib energy chunks (recipe at the very bottom of this page)

Ingredients:

Yields around 75-80 small rounds

1 cup of cashews

2 cups of rolled oats

1/2 cup (or less) of agave nectar

1-2 T of chia seeds

1/4 cup cacao nibs (or to liking)

1/4 cup unsweetened coconut flakes    (I used a Coconut Bliss Bar that I bought from New Frontiers that has other ingredients in it. I warmed it enough for the oil to melt then added it. It was a nice added treat!)

Directions:

1. Add all the ingredients in a food processor.

2. Mix until all the ingredients are wet and chopped to desired consistency. (add more agave it needed)

3. Roll the mixture into small rounds or bars.

4. Put them onto a cookie sheet with wax paper (or I just placed mine into a glass container), place in the freezer or fridge. They will set after about an hour. If desired, you can roll them in unsweetened shredded coconut to make them look prettier and taste more like coconut.

Ingredients: (note, I doubled this recipe)

  • 1/2 cup raw cashews
  • 1/4 cup agave nectar (or I think maple syrup would be delish!)
  • 1 cup steel cut oats
  • 1/4 cup cacao nibs
  • 1/4 cup unsweetened coconut flakes
